EASY OKRO SOUP RECIPE.
Okro soup is a popular Nigerian Soup made with Chopped Okras, Ugwu(Pumpkin leaves) and Palm oil. It is very delicious and easy to make. Vegetable Okro soup is an Eastern dish very popular with the Igbo people of Nigeria.

There is another version of Okro soup made by the Yorubas. It is made by cooking grated or chopped Okro mixed with Iru(Locust beans). The Okro mix is then served with the popular “Yoruba stew”.

The combo is usually to-die-for and will make you nearly lick your plate.LOL.It is usually eaten with Eba, Amala, Semo or Wheat.

If I was asked to choose between both soups. I don’t think I would be able to! It would be better you tried yourself and be the judge. Although I’m pretty sure you’d be in the same dilemma as me.

Now let’s get down to the preparation and all you’d need for your dish.

OKRO SOUP INGREDIENTS

SERVING- 6 PEOPLE.

PREPARATION TIME:45 MINS

  • Meat of choice (Beef, Chicken, Pork e.t.c)
  • 3 Bags Medium-sized bags of Finely chopped Okro.
  • Ugwu Leaves.
  • Palm oil.
  • Crayfish.
  • Smoked Fish.
  • Shrimps(Optional).
  • Dried/Stock Fish.
  • Kpomo (Optional).
  • Yellow(Cameroon Pepper) and Red (ATA rodo)Habanero Pepper.
  • Seasoning Cubes.
  • Salt to taste.

PREPARATION

STEP 1

Put your already washed and picked stock/dried fish in a bowl and pour hot water over it. Then set aside. (I usually like to add a little salt or seasoning cubes to give some flavor)

STEP 2

Put in your Meat and Kpomo in a pot and add salt and seasoning to taste. Cook for 25-30 mins or till done. Set aside.

STEP 3

Get a clean pot and add about 2-3 cooking spoons of palm oil. Add chopped onions and allow to stir fry for about 30-45secs.

STEP 4

Add ground crayfish and Habanero Pepper Mix into your pot.

(Habanero Pepper is very spicy so make sure to not use more than 2-3 pieces of you’re using Cameroon Pepper)

STEP 5

Add Dried/Stockfish(Drain water beforehand) and stir-fry for about 2-3 mins.

STEP 6

Add your chopped Okra (Please wash your Okro before slicing). Continue to stir fry till you get a slimy consistency (The Okra begins to “draw” )

STEP 7

Add Shrimps and Meat stock (meat and Kpomo) that you’d earlier set aside. Finally, stir.

STEP 8

Add seasoning Cubes and some salt to taste. Keep stirring for about 5 mins.

(Some people recommend covering your pot and allowing to cook for 5 mins but in my opinion, I feel it makes the Okro come out overdone.)

STEP 9

Add your smoked Fish and Stir. (This is usually the last ingredient added before the vegetable)

STEP 10

If you feel the soup is too thick, you can add water to your satisfaction but make sure it’s not too much.

STEP 11

Add already wash Ugwu leaves and stir. Cook for another 1-2 mins.

STEP 12

Serve with Eba, Semo, Fufu or Wheat.

(Okra soup usually tastes the best when served with Semo or Eba)
